Ground Beef Tacos w/ Cabbage Slaw & Garlic Aioli
This has been a favorite of mine for years! It was inspired by my friend Dr. Tanda’s “steak tacos” that are in her cookbook, Food That Grows. If you don’t already follow her, you totally should! She is the master of all things food, farming, & wellness - and she has helped my family and I so much over the years. Her cookbook was a game changer for our family when we met her 12 years ago! My sister and I also offered this meal at our meal delivery business when we had that. Everyone loved it.
For this recipe, I will say, I am sucker for GOOD ground beef. If it has gristle, I’m out. So I buy 100% grass fed ground beef sirloin from Seven Sons. When cooking the beef, I even add a little bit of butter into the beef as its cooking. This gives the beef a crispy edge and extra flavor. I love going back to this meal time and time again because of the flavor…and it’s so quick and easy. This recipe is a fan favorite. My husband goes crazy for it.
Cook':
1lb grass fed beef cooked on the stove top with salt, pepper, and 1 TBSP of butter
Mix:
Chop 1/2 bunch cilantro and 2 cups purple or green cabbage (or both) & mix together with 1 tsp salt and juice of 1 lime
Whisk sauce together:
4 cloves minced garlic
1/2 cup mayo (I have been using Graza lately)
1/4 cup yogurt (I do raw A2)
2 TBSP Dijon
Juice of 1 lime or lemon
1/2 tsp salt and pepper
I either use organic heirloom corn tortillas or a Siete almond flour tortillas.
Heat tortilla
2. Layer beef
3. Then cabbage slaw
4. Add sauce
& Boom
You can also just eat this as a taco bowl. Add some avocado or goat cheese and call it good!
